- • 7g instant yeast (2%)
- • 18g olive oil (5%)
- • 9g salt (2.5%)
- • 4g sugar (1%)

Hydration Levels: Which Pizza?
55-60% (New York Style)
Ratio: 3 cups flour + ⅞ cup water
Crispy, foldable crust. Easy to work with. Best for beginners.
65-70% (Neapolitan Style)
Ratio: 3 cups flour + 1⅛ cup water
Soft, chewy crust with leopard spots. Sticky dough. Needs experience.
50-55% (Thin & Crispy)
Ratio: 3 cups flour + ¾ cup water
Cracker-thin crust. Very firm dough. Great for home ovens.
