500g + 300ml + 100ml
Makes 1 sheet pan (9x13") focaccia
Classic Focaccia Recipe
Ingredients (5:3:1 ratio)
- Bread flour 500g (4 cups)
- Warm water 300ml (1¼ cups)
- Extra virgin olive oil 100ml (½ cup)
- Active dry yeast 2 tsp
- Salt 2 tsp
- Sugar 1 tsp
- Toppings Rosemary, sea salt
Instructions
- 1. Mix yeast + sugar + warm water. Let sit 5 min.
- 2. Add flour + 50ml oil + salt. Mix until shaggy dough.
- 3. Knead 5-7 min until smooth. Rise 1 hour (doubled).
- 4. Pour 25ml oil in 9x13" pan. Press dough to edges.
- 5. Rise 30 min. Dimple with fingers. Drizzle 25ml oil.
- 6. Top with rosemary + flaky salt. Bake 425°F 20-25 min.
🫒 Why So Much Olive Oil?
Oil creates crispy bottom + golden crust. Dimples trap oil pools = flavor pockets. Don't skimp on good quality EVOO!
