1. Room Temperature
Leave lemons out 30 minutes. Room temp = more juice (up to 30% more!)
2. Roll on Counter
Press + roll firmly 5-10 times. Breaks down cell walls = easier to extract
3. Microwave Trick
Microwave 10-15 seconds. Warms citrus, softens pulp, increases yield
While Juicing:
4. Cut Lengthwise
Cut from stem to tip (not equator). More surface area = more juice
5. Twist While Squeezing
Twist lemon back and forth on reamer/hand juicer. Gets last drops
6. Use Fork in Flesh
No juicer? Stab fork into lemon half, twist to release juice

Amount: ~2 tablespoons zest
- • 1 lemon = 1 tablespoon zest

Common Questions
Can I use lime juice instead?
Yes for most recipes! 2 limes = 60-80ml (slightly less than lemons). Flavor is different (more tart, less floral). Use 1:1 in savory dishes, taste and adjust in desserts.
What if my recipe needs 100ml and I get 90ml?
It's fine! Recipes have tolerance. If you're 10ml short (≈2 tsp), most recipes won't suffer. Or add water/extra lemon juice to reach exact amount.
Meyer lemons vs regular lemons?
Meyer lemons are sweeter, less acidic, and yield slightly less juice (30-40ml per lemon). Use 2.5-3 Meyer lemons to equal 2 regular lemons' juice.
